Banoffee Butterfly Cakes


You will need...

1 pack Green’s Divine Banana Cake Mix

300ml thickened cream

Canned caramel topping

12 patty cases
(not included in cake
mix pack)


Preheat

Preheat oven to 180°C (160°C for fan forced). Line one 12 hole muffin pan with patty cases.

Mix

Prepare Banana Cake as per pack directions, dividing batter evenly between 12 patty cases.

Bake

Bake for 20-25 minutes in preheated oven at 180°C (160°C for fan forced). Allow to cool.

Filling

Put aside 1 tablespoon icing mix from icing sachet. Whip remaining icing mix with thickened cream until peaks form.

Assemble

Cut out 2cm deep circles from tops of cold cupcakes, reserve tops.

Place a small amount of caramel in the cavity, top with a spoonful of cream.

Cut reserved tops in half. Push halves into cream, butterfly fashion.

Lightly dust with remaining icing mix.

Enjoy
