Chai Latte Cupcakes

You will need...

1 pack Green's Vanilla Cupcakes Mix

2/3 cup (150ml) milk plus a little extra

8 Chai tea bags

2 eggs

3 tablespoons (60g) soft butter or margarine

4 tablespoons (80g) soft butter or margarine

1-2 teaspoons ground cinnamon

Cinnamon sticks to decorate (optional)

Prepare cupcakes

Heat milk gently until warm, draw tea bags in the milk to infuse flavour and allow to cool. Squeeze out teabags and add a little extra milk to make up 2/3 cup (150ml). Follow instructions on the pack using the chai milk to make the batter and bake according to directions.


Make frosting according to direction, pipe onto cooled cupcakes.

Dust with the cinnamon according to taste and decorate with cinnamon quills if desired.
