Easy Christmas Cake

You will need...

1 pack Green’s Classic Sultana Cake Mix

60g margarine or butter

200mL boiling water

375g Mixed fruit

1/2 tsp Mixed Spice

1/4 tsp nutmeg

1 tablespoon rum essence (optional)

1 egg


Preheat oven to 180°C (160°C for fan forced).


Grease a 20cm square cake pan and line with baking paper.

To a medium saucepan add mixed fruit, margarine or butter and boiling water. Bring to the boil stirring and simmer for 5 minutes. Take off heat, stir and allow to stand for 5 minutes.

Empty contents of Sultana Cake mix into saucepan.

Add egg, rum essence and spices. Mix with a wooden spoon until mixture is combined.

Pour batter into prepared pan.


Bake for 40-50 minutes or until cake springs back when touched in the centre.


Allow to stand for 10 minutes before turning onto a wire rack to cool.
