Jam Doughnut Muffins

You will need...

1 pack Green’s Multi-purpose Muffin Base

1 egg

1 cup (250mL) water

1/2 cup caster sugar

3 tablespoons (60mL) polyunsaturated vegetable oil

3 tablespoons strawberry jam

1 teaspoon ground cinnamon


Preheat oven to 180°C (160°C for fan forced). Grease 2 x 24 hole mini muffin pans.


Mix caster sugar and cinnamon together in a small mixing bowl and set aside.

Place muffin mix, vegetable oil, egg and water into mixing bowl. Mix with a wooden spoon until combined.

Place a teaspoonful of mixture into each muffin hole and indent in centre. Fill each indent with 1/4 teaspoon of strawberry jam.

Cover the jam with remaining muffin batter.


Bake for 12 - 15 minutes in preheated oven at 180°C (160°C for fan forced) or until golden brown. Remove from oven and set aside for 5 minutes.

While muffins are still warm roll them in cinnamon sugar.
