Lemon Drizzle Loaf

You will need...

1 pack Green’s Smooth Lemon Cake Mix

2 eggs

60g soft butter or margarine

150mL milk

Finely grated rind of 1 lemon

1/2 cup (125mL) lemon juice


Preheat oven to 180°C (160°C for fan forced).


Grease and flour, or line a 22 cm x 11cm loaf pan.

To a mixing bowl add cake mix, eggs, soft butter or margarine, milk and lemon zest. Mix with a wooden spoon until combined.


Bake for 35 – 40 minutes.

Remove loaf pan from oven.

Lemon Syrup

For syrup, place sachet of icing mix from Green’s Smooth Lemon Cake pack and lemon juice in a saucepan and heat gently without boiling, stirring until icing mix dissolves.

Prick the top of the loaf several times with a skewer and pour syrup over.


Leave to cool completely in the tin.
