Pink Lemonade Cupcakes

You will need...

1 pack Green's Vanilla Cupcakes Mix

2 eggs

1/3 cup milk

1/3 cup lemonade

3 Tablespoons (60g) soft butter or margarine

1/8 teaspoons natural pink food colour for swirl*

1/4 teasppon natural pink food colour for frosting

1/2 teaspoon citric acid* for frosting

4 Tablespoons (80g) soft butter or margarine for frosting

Straws for decorating


Preheat oven to 180°C/350°F (160°C for fan forced).

Prepare Cupcakes

Make according to directions , remove 3 tablespoons of the batter keep aside and mix in the pink colouring.

Place remaining batter evenly into the patty cases then divide the pink between the cases and swirl through with a skewer.


Bake for 20 minutes or until well risen and springy to touch, allow to cool.

Prepare Frosting

Empty frosting mix into a mixing bowl add butter or margarine, make according to directions.

Take 1/2 the finished frosting mix and add the pink colouring and citric acid and mix well with a wooden spoon.

Using a piping bag and plain nozzle place the pink down one side of the bag and the white on the other. Pipe frosting on cupcake and decorate with straws.

*NOTES: Both natural food colouring and citric acid are in the baking aisle of your supermarket.
